The perfect summer meal using a variety of colourful raw veggies and requires zero cooking ability! Finger food that the kids will love! My Rylee Brooke is in love with the mango salsa and requests it almost daily =P. Mango contributes significant amounts of vitamin C and folate.
12 rice paper sheets (3 each)
shredded BBQ chicken
2 carrots, grated
2 capsicum, diced
1 pineapple, diced
Serve with sweet chilli sauce or mango salsa
1 red chilli (with or without seeds depending on desired spice)
Prepare and place all ingredients into serving bowls.
Put water on to boil, using a kettle.
While water boils, use a food processor to blend together the mango, avocado and chilli. Serve mango salsa into a serving bowl.
Pour boiling water into a pie dish or similar circular pan.
Dip rice paper into boiling water until soft and place onto your plate (only needs a few seconds).
Fill rice paper with all desired ingredients and top with sweet chilli sauce or mango salsa.
