This was my go-to brekky during the winter months living in Canberra. The topping works perfectly on oatmeal and even served with yogurt as a morning or afternoon snack.
- Serves 1
- ½ cup rolled oats
- 1 cup milk of choice (or water)
- ½ cup almonds
- ½ cup coconut flakes
- ½ cup goji berries
- ½ cup flaxseeds
- Combine oatmeal and milk or water in a saucepan and place on medium heat. Stir every few seconds and allow to cook for approximately 5 minutes.
- To make the oatmeal topping, combine the remaining ingredients in a food processor. Note: topping can be kept in a container for future easy-use.
- Serve oatmeal into a bowl and top with 1-2 tbsp of topping.
